What to eat when it's a million degrees...

And your apartment has no A/C.

With the temperatures soaring over 100 degrees today I was not about to make anything hot for dinner tonight, or even think about turning on the stove.

I was craving Sahadi's hummus and something cool and refreshing and decided to combine the two. I was originally going to go for a sort of pico de gallo, but saw a mango at the little grocer next to Sahadis, and that sealed the deal.

Mango Salsa Hummus with Fresh Feta Pita Pizza

Mango Salsa:
A couple handfuls of cherry or grape tomatoes
A few sprigs of cilantro
One scallion chopped
One large clove of garlic
Half a jalapeno, seeded
A small quarter of white onion
One half a green pepper
One mango, peeled
A dash of sea salt
Juice of one lime

Place all the ingredients in a food processor and pulse until desired smoothness.

Spread hummus on a pita, spoon salsa over the top, cover with chopped tomatoes and crumbled feta.

Enjoy!

(This is only a half size because I had already eaten a whole one!)
